- 4 dried Tomatoes (in oil)
- 3 garlic cloves
- 1 red onion
- 2 scallions
- 1 jar Caper
- 3 Tbsps good quality olive oil

Preparation steps

Soak the beans overnight in water. The following day, season the water with salt. Add the peeled garlic cloves and sage leaves, cover, and cook until tender. For the tomato, finely dice the tomato. Peel and finely dice the garlic and onion. Thinly slice the scallions. Mix the cooked beans with the prepared ingredients and the olive oil. Season to taste with salt and pepper.

Rinse the herbs, pat dry, and sprinkle over the salad. Let the salad infuse for at least 1 hour, then adjust the seasoning if necessary. If you'd like, you can mix olives into the salad before serving.
