Chilled Roast Beef Sandwich
Rinse the peppers, core, cut in half, remove the seeds and pith and then cut into wide strips. Rinse the leek, trim, cut the green parts into long strips and blanch in boiling salted water for about 5 minutes. Drain on paper towels. Season the meat with vinegar and oil.
Cut the baguette in half lengthwise and scoop out the center. Arrange the peppers and meat over half and the leek and mayonnaise over the other half. Sandwich the halves together and squeeze firmly. With a sharp knife, cut into 4-5 cm (approximately 2-inch) thick slices. Wrap each in a napkin and serve.
