Preparation steps

Wash and trim the courgettes and cut into small pieces. Peel the onion and chop very finely. Heat the butter in a large pan and sweat the onion until translucent. Then add the courgette and sweat briefly. Add the stock, bring to the boil and cook gently for 10 minutes. Remove from the heat, stir in the basil and leave the soup to cool. Season to taste and serve in glasses, adding about a teaspoonful of sour cream to each.
