- 2 cups vegetable stock
- 4 small, finely chopped Zucchini
- 2 ripe Avocados
- Lime juice (from one lime)
- ⅞ cup natural Yogurt
- 3 mint
- ¾ cup Watercress
- ground Cumin
- Limes (to garnish)

Preparation steps
1.
Bring the stock to a boil and add the courgette. Allow to simmer for 4–5 minutes until soft.
2.
Remove from the heat, let cool and then chill for about 1 hour.
3.
Peel, halve and finely chop 1 1/2 avocados and drizzle immediately with lime juice so it doesn't go black.
4.
Add to the courgette soup along with the yogurt, mint and watercress.
5.
Season with a pinch of cumin and a pinch of salt, ground black pepper and then puree using a hand blender until creamy. If necessary re-season.
6.
Divide the courgette-avocado soup into 4 bowls.
7.
Chop reserved avocado use to garnish with the lime slices.
