18 ozs ripe Tomatoes
boiling water
½ Cucumber (peeled and cut into small dice)
1 red Bell pepper (cut into small dice)
2 onions (chopped)
1 Tbsp white wine vinegar
2 cloves garlic cloves (crushed)
1 tsp sugar
1 tsp sweet paprika
2 Tbsps olive oil
salt

1 Small pot, 1 Mixing bowl, 1 Tablespoon, 1 Small knife, 1 Measuring cups, 1 Hand mixer, 1 Kitchen towel, 1 Baking sheet, 1 Parchment paper, 1 Teaspoon, 1 kleines Sieve

Preparation steps

1.
Put the tomatoes into a heatproof bowl and cover with boiling water. Stand for 1 minute then drain off the water and and set aside for a few minutes until cool enough to handle, then peel off the skins.

Set aside 2 tablespoons of the cucumber and 2 tablespoons of the red pepper for garnishing.

Put all the ingredients into a blender or food processor and blend until smooth. If the mixture is too thick, add cold water, a little at a time, until the soup is how you want it.
4.
Season with salt and pepper - you may also want to add more sugar.
5.
Chill in the refrigerator for at least 1 hour, then serve in bowls with the reserved diced cucumber and red pepper scattered on top as a garnish.
