- 1 small red Bell pepper
- 1 green Bell pepper
- 250 grams Tomatoes
- 1 small, yellow Zucchini
- 1 can Kidney beans
- 1 sm jar Corn
- 1 scallion
- 3 Tbsps olive oil
- 1 large onion (chopped)
- 220 grams Rice
- 500 milliliters Beef broth
- salt
- freshly ground black peppers
- 1 generous pinch cayenne pepper
- 1 tsp Chili powder

Preparation steps

Rinse the bell peppers, cut in half, remove the seeds and ribs, and cut into short strips. Blanch the tomatoes in boiling water for a few seconds, peel, quarter, cut out the stems and cut into cubes. Rinse the zucchini and cut into small pieces. Drain the beans and the corn. Rinse and trim the scallions and cut into rings.

Heat the olive oil in a pan and fry the chopped onion in it, add the rice, cook briefly, pour in the broth and season with salt, pepper, cayenne pepper and chili seasoning. Bring to a boil and simmer over low heat about 12-15 minutes. Add the vegetables (peppers, tomatoes, zucchini, beans, corn, and scallions) and simmer everything together for another 8-10 minutes. Serve in bowls.
