- 4 Endive
- 1 handful Arugula
- Radicchio
- 2 Pear
- 2 Tbsps chopped Walnut
- 8 slices Bacon
- salt
- freshly ground peppers
- 4 Tbsps apple cider vinegar
- 1 Tbsp lemon juice
- 2 Tbsps grapeseed oil
- 2 Tbsps sunflower oil
- 1 tsp honey

Preparation steps

For the salad, rinse and trim the chicory, remove the hard stalk and divide the leaves. Rinse the arugula and remove any tough stems. Rinse and trim the radicchio and cut into small pieces. Rinse and halve the pears, remove the cores and cut into thin columns.
Arrange everything together on plates and shower with walnuts.
Sear the bacon in a dry skillet until browned.

For the dressing, combine the apple cider vinegar, lemon juice, oil and honey. Season with salt and pepper. Drizzle over the salad and serve topped with bacon slices.
