- For the hummus
- 2 cups canned chickpeas (drained)
- 2 Tbsps lemon juice
- 1 Tbsp Tahini
- ground Cumin
- For the vegetables and assembly
- 1 ½ Tbsps olive oil
- 1 large Red pepper (diced)
- 1 large, yellow pepper (diced)
- 1 large Zucchini (diced)
- 4 Flour tortillas
- salt
- freshly ground Black pepper

Preparation steps

For the hummus: Preheat the grill to hot. Combine the chickpeas, lemon juice, tahini, cumin, a couple of tablespoons of hot water, and seasoning in a food processor.

Blend on high until creamy, scraping down the sides if needed. Season to taste, cover, and set to one side.

For the vegetables and assembly: Toss the vegetables with the olive oil and seasoning. Spread out evenly on a tray, and grill for 5 - 6 minutes until lightly charred.
4.
Spread the tortillas with the hummus, stopping a few centimetres short of the borders. Top with the grilled vegetables, roll up into wraps, and serve.
