Chicken with Vegetables, Pasta and Sweet Chili Sauce
Cook the pasta in salted boiling water according to package instructions and drain well.
Rinse chicken breasts, pat dry and cut into bite-sized pieces. Season with salt and pepper. In a wok, stir-fry chicken in 1 tablespoon sesame oil. Remove chicken and keep warm. Rinse scallions, trim and shake dry. Cut scallions on the diagonal. Rinse and halve bell peppers, remove seeds and ribs and thinly slice. Peel garlic and press through a garlic press. Rinse and halve chile pepper lengthwise, remove seeds and ribs and cut into thin strips. Add remaining oil to wok. Stir-fry scallions and garlic. Add bell peppers and chile pepper and stir-fry. Deglaze with broth. Add soy sauce and chili sauce and season with salt and pepper. Cover wok and simmer about 6 minutes. Return chicken to wok along with pasta. Heat a few minutes. Serve sprinkled with cilantro leaves.
