- 4 Chicken legs
- 4 Chicken breasts (skin-on)
- 8 shallots
- 100 grams button Mushroom
- salt
- freshly ground peppers
- 100 grams smoked Pancetta
- 400 milliliters Dark beer
- 1 Tbsp freshly cut parsley
Preparation steps

Fill a clay pot with water.

Rinse the chicken and pat dry. Halve the chicken breasts. Peel and halve the shallots. Clean and halve the mushrooms.

Preheat the oven to 200°C (approximately 400°F). Season the chicken with salt and pepper. Add the chicken and pancetta to a pan, and brown on all sides. Remove from the pan and deglaze with 100 ml (approximately 3 ounces) of the beer. Mix the mushrooms, shallots, pan drippings, and parsley. Season to taste with salt and pepper, and add to the clay pot. Add the chicken and pancetta, and top with the remaining beer. Close the lid, and cook for 1 hour. Serve with a baguette, if you'd like.
