8 Prince mushrooms (or other wild mushrooms)
2 garlic cloves
150 grams Pancetta (sliced)
450 grams Spinach
4 Tbsps olive oil
salt
freshly ground peppers
200 grams Taleggio cheese

Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F).

Clean the mushrooms, removing stems. Peel the garlic and chop finely. Cut pancetta into 1 cm (approximately 1/2 inch) cubes. Trim spinach, rinse and spin dry.

Heat the 3 tablespoons oil in a pan, add the mushrooms and fry on each side for about 3 minutes. Season with salt and pepper and remove from the pan. Place open side up in a baking dish.

Add the remaining oil to the pan and fry pancetta until crispy. Drain grease from the pan. Mix the garlic with the pancetta cubes in the pan and sauté briefly.

5.

Add spinach and cook until wilted. Season with salt and pepper and fill the mushrooms with the mixture.

6.

Cut cheese into 8 slices. Lay 1 slice on each mushroom. Place mushrooms in the oven on the lowest rack and bake for about 8 minutes. Serve immediately.
