1 chicken (approximately 1.4 kg)
2 Tbsps lemon juice
4 Tbsps olive oil
Red pepper flakes

2 tsps dried italian Fresh herbs

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse chicken, pat dry, cut along the back and unfold. Place on the oven rack (with drip tray below). Mix lemon juice in a bowl with oil, red pepper flakes and salt. Brush chicken with lemon juice mixture. Bake on the preheated oven for about 45 minutes. Brush with lemon juice mixture during the cooking time as needed. During the last 10 minutes of cooking, mix herbs with lemon juice mixture and coat chicken with it.

Remove from oven and serve. If desired, serve with mixed salad.
