- 400 grams purple Plum
- 1 shallot
- 1 centimeter fresh ginger
- 1 Tbsp butter
- 1 tsp powdered sugar
- 125 milliliters dry Red wine
- ½ Cinnamon stick
- 3 cloves
- 2 allspice
- 1 Star anise
- 1 tsp Plum butter
- salt
- freshly ground peppers

Rinse the pears, cut in half, and remove the stones. Peel and finely chop the shallot and ginger. Heat 1 tablespoon of butter in a pan, add the shallot and ginger, and sauté briefly.

Add the plums, sprinkle with the powdered sugar, and caramelize lightly. Deglaze with the wine, then add the spices and reduce by half. Remove the spices, add the plum butter, and season to taste with salt and pepper.
