- 1 cup flour
- 2 cups italian breadcrumbs
- ½ tsp freshly ground Black pepper
- ½ tsp cayenne pepper
- 2 eggs (beaten)
- 2 Tbsps water
- 24 boneless, skinless chicken tenderloins (rinsed and patted dry)
- Oil (for frying)
- Dip (your favorite)
- 1 fresh lemon (cut into wedges)

Preparation steps
1.
Place flour in a shallow bowl. Place breadcrumbs, pepper and cayenne pepper in a separate shallow bowl. In a small bowl, whisk beaten eggs and water together.
2.
One tenderloin at a time, coat the chicken in flour, followed by eggs and breadcrumbs, set aside.
3.
Heat the oil in a deep fryer to 375º F / 190º C.
4.
Working in small batches, fry the chicken for 6 to 8 minutes, or until golden brown. Remove chicken and drain on absorbent paper towels.
5.
Serve with your favorite dipping sauce and lemon wedges.
