Preparation steps

Rinse chicken breasts and pat dry with paper towel. Bring chicken broth to a boil in a pot. Add chicken, bring to a boil again, cover and simmer over low heat for about 10 minutes until done. Then remove from the heat and allow chicken to cool in the broth.

In the meantime, rinse scallions, trim and cut into rings. Drain pickles and cut lengthwise into slices. Drain beets and pat dry with paper towel. Rinse lettuce, trim, spin dry and tear into small pieces.
