- 4 Chicken breasts
- 2 Tbsps vegetable oil
- 1 Mango
- 1 red Bell pepper
- 1 Tbsp yellow Curry paste
- 200 milliliters Chicken broth
- 50 milliliters Mango juice
- soy sauce
- freshly ground peppers
- 2 mint
- 200 grams Rice
- ½ Cucumber

Preparation steps
1.
Cook rice according to package instructions.

Rinse and slice cucumber.
3.
Pluck mint leaves, reserving a few for garnish. Chop remaining mint leaves.

Rinse chicken breasts, pat dry and cut into cubes.
5.
Peel mango and cut into cubes.
6.
Rinse and halve bell pepper, remove seeds and ribs and cut into bite-sized pieces.
7.
Fry chicken in hot oil. Stir in curry paste and deglaze with chicken broth. Add mango juice and bell pepper. Simmer, stirring, 3-4 minutes. Add diced mango and chopped mint. Season with soy sauce and pepper. Serve chicken over rice, topped with cucumber slices and garnished with reserved mint leaves.
