- 600 grams Beef shoulder
- 5 shallots
- 2 Beefsteak tomato
- 2 Tbsps vegetable oil
- 1 Tbsp black Bean sauce
- ½ tsp Turmeric
- 2 Star anise
- 1 generous pinch ground coriander
- salt
- freshly ground peppers
- 200 milliliters Beef broth
- 200 grams thin Rice noodles
- Coconut oil (for frying)
- 2 Tbsps chopped fresh cilantro
- 2 Tbsps chopped Cashews

Preparation steps

Rinse the meat, pat dry and cut into bite-sized pieces. Peel the shallots and cut into wedges. Blanch the tomatoes, rinse with cold water, quarter, core and cut into small cubes.

Heat the oil in a wok and brown the meat on all sides. Add the shallots and cook briefly. Stir in the tomatoes and the black bean sauce and toss with the meat. Add the spices, pour in the broth and simmer 50-60 minutes over medium heat.

Meanwhile, cook the pasta in boiling salted water for 2 minutes, drain, rinse with cold water and drain well. Twirl the pasta with a fork and and saute in a pan with hot coconut oil until golden brown. Arrange on plates. Season the meat mixture again and serve on the noodles. Serve garnished with cilantro and chopped cashews.
