Chicken Quesadillas with Spicy Mango Relish
Ingredients
- For the chicken
- 8 Tortillas (finished product)
- 2 Tbsps Taco sauce (finished product)
- 250 grams Chicken breasts (fried)
- 3 scallions
- 2 Tbsps parsley (chopped)
- 2 tsps Chili powder
- 200 grams Cheddar cheese (or Gouda, grated)
- For the mango relish
- 2 ripe Mangoes
- 4 Tbsps olive oil
- 3 garlic cloves
- ½ fresh chili pepper
- 1 Tbsp Crème fraiche
- salt
- cane sugar
Preparation steps
Cut the chicken breast into thin strips. Rinse and trim the scallions and finely chop. Mix the meat with the spring onions, parsley, salt and chili powder.
Heat the tortillas one at a time in a dry pan over medium heat on each side for 2-3 minutes. Brush the finished tortillas with taco sauce, then distribute the chicken on 1/2 of them. Sprinkle with cheese. Place a second tortilla on top and cook for another 2 minutes. Turn carefully and cook the other side for another 2 minutes to fully melt the cheese. Remove from the pan, cut into quarters and serve with mango relish.
For the relish, peel the mangos and cut the flesh cut away from the pit. Place the flesh and olive oil in a blender and puree. Peel the garlic and finely crush with a mortar. Rinse the chile, cut in half lengthwise, remove the seeds and finely chop. Stir the cream fraiche into the puree. Season the sauce with salt and cane sugar to taste. Serve the mango relish with the quesadillas.
