- 1 stale White roll
- 6 cilantro
- 1 shallot
- 2 garlic cloves
- 1 tsp butter
- 400 grams Chicken breasts (skinless)
- 2 eggs
- 1 Tbsp breadcrumbs
- salt
- peppers (from the mill)
- 1 generous pinch untreated grated Lemon peel
- vegetable oil (for frying)
- Grape leaf (for serving)

Preparation steps

Soak bread in cold water. Rinse coriander leaves, pluck leaves from stems and finely chop. Peel shallot and garlic and chop finely, then sauté in butter until translucent. Rinse chicken breasts, pat dry and use a mincer to chop finely. Squeeze bread, pick apart and mix with chopped chicken, coriander, onion, egg and breadcrumbs. Season with salt, pepper and lemon zest.

With moistened hands, form small meatballs and fry in oil for 6-8 minutes while turning.

Drain on absorbent paper and serve over grape leaves.
