- 1 red chili pepper
- 1 ½ centimeters fresh ginger
- 1 garlic clove
- 1 shallot
- Corn oil
- 600 grams Ground beef
- 1 egg
- 1 Tbsp freshly chopped cilantro
- 4 Tbsps breadcrumbs
- salt
- peppers (freshly ground)
- 30 Kaffir lime leaves

Preparation steps
1.
Rinse the chili, halve lengthwise, clean out the seeds and finely chop. Peel the ginger, garlic and shallot and finely chop. In a hot pan with 1 tablespoon of oil sauté the shallots with the garlic, ginger and chili briefly, remove from heat and cool.

In a bowl mix the ground beef with the egg, the shallot mixture, copped cilantro and breadcrumbs until well combined. Salt and pepper to taste.
3.
With the ground beef mixture, form into small meatballs. Secure a lime leaf into each meatball with a toothpick. In a hot pan with oil brown meatballs on all sides. Reduce the heat and let the meatballs cook until done.
