300 grams fresh Brussels sprouts
salt
500 grams Chicken breasts (ready to cook)
2 ripe Apple (such as Boskop)
1 Tbsp lemon juice
2 shallots
4 sprigs thyme
2 Tbsps olive oil
freshly ground peppers
150 milliliters Vegetable broth
200 grams Goat cheese

Preparation steps

Rinse sprouts and cook in boiling salted water for 10-12 minutes or until al dente. Rinse with cold and drain well.Rinse chicken, pat dry and cut into thin strips. Rinse apples, quarter adn core, slice and immediately sprinkle with lemon juice. Rinse thyme and shake dry. Peel shallots and cut into thin strips.

Heat oil in a pan and brown chicken on all sides on high heat. Add brussels sprouts, shallots and apples and cook briefly. Add thyme and season with salt and pepper. Deglaze pan with broth and simmer for about 5 minutes on medium heat. Cut cheese into slices, arrange on top of chicken and vegetables. Broil under a hot broiler until golden, watching carefully. Remove from oven and sprinkle with freshly ground pepper. Serve.
