2 Avocados (pitted and sliced)

Brush the panini press clean between grilling each batch.

Preparation steps

1.
Preheat a panini press according to the manufacturer's instructions.
2.
Sprinkle the mozzarella evenly over four slices of bread. Top with slices of chicken, a sprinkling of paprika, and then slices of avocado.
3.
Sit the other slices of bread on top of the avocado and brush the top of the bread with olive oil.
4.
Sit the oiled-side of two sandwiches directly on the panini press and brush the top side of the sandwiches with some oil. Secure the press and grill the sandwiches until the bread is toasted and golden on both sides.
5.
Grill the other two paninis in the same way before slicing, stacking, and serving with pickled peppers.
