- 1 tsp clarified butter
- salt

- 3 carrots
- ¼ Celery
- 1 Zucchini
- 1 onion
- 1 Red Bell pepper
- 3 scallions
- 2 Tomatoes
- 4 Tbsps butter
- 3 eggs

Preparation steps

Cut the chicken into strips and fry in a pan with hot clarified butter for 3-4 minutes. Season with salt and pepper and set aside. Rinse the vegetables and cut them into cubes. Sauté in 2 tablespoons of butter while stirring for 2 minutes, then cover and simmer for 4 more minutes. Season with salt and pepper and add the chicken. Beat the eggs with 1 tablespoon of water, add salt and pepper and cook in a pan with the remaining butter over medium heat until the omelette is set.

Transfer the omelette to a plate, pour the chicken and vegetable mix over one half, then fold the omelette over and serve.
