- 24 slices prepared deli chicken
- ½ tsp salt
- ¼ tsp peppers
- 24 wooden Skewer
- 24 mint
- 2 Mangoes (diced large)
- 1 cup water
- ½ cup brown sugar
- 3 Tbsps Lime juice
- 2 Tbsps Fish sauce

Preparation steps
1.
Place the chicken deli meat in a bowl and season with salt and pepper. Mix well.

To make the chicken skewers, start with a slice of chicken meat and slice or fold in half then layer with a large mint leave or two smaller mint leaves. Weave the wooden skewer through the chicken and the mint stopping halfway to add a piece of mango before weaving the skewer all the way through.

In a small pot, on high heat bring water to a boil. Then turn heat down to simmer. Add brown sugar. Stir until fully dissolved. Add the lime juice. Simmer for 5 mins. Next add the fish sauce and remove from heat. Taste the sauce for a balance of sweet, sour, and salty flavors. Add more fish sauce if too bland, more sugar if too tart, etc. Put in a bowl and place in refrigerator. Once the sauce is cool serve alongside the skewers.
