Drizzle the bread with 3-4 tbsp olive oil and toast in a griddle pan to create the typical grill pattern on the bread.
Remove the bread from the pan and top with the pear wedges and cheese. Season with chilli flakes, salt and ground black pepper. Finally add the chicken and spinach, garnish with cranberries and drizzle over a few drops of olive oil.
