- For the pastry
- 2 ¼ cups all-purpose flour
- ¾ cup butter
- 1 egg yolk
- 1 tsp salt
- For the filling
- 4 large onions
- 1 Tbsp Oil
- 100 cream
- ⅔ cup Crème fraiche
- 3 eggs

- 1 ½ cups grated Gouda

1 Small skillet, 1 Bowl, 1 Small plate, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Teaspoon, 1 Immersion blender, 1 deep bowl, 1 Peeler, 1 Citrus juicer, 1 Small knife
Preparation steps

Put all the pastry ingredients into a bowl, chop well with a knife then quickly combine and knead to a smooth dough. Cover and put into the refrigerator to rest for 30 minutes.

Peel the onions, wash in cold water and dice finely. Heat the oil and sweat the onions until translucent.

Mix the cream with the crème fraiche and eggs. Season with salt and pepper and add nutmeg to taste. Stir in the onions and grated cheese.

Roll the pastry out thinly on a floured work surface and use to line a tart tin. Spread the filling evenly in the lined tin and bake in a preheated oven (220 °C with top and bottom heat) for about 30 minutes. Cover with aluminium foil if it browns too quickly.
