Chicken and Chickpea Soft Tacos

- 1 Corn (kernels only)
- 2 Tbsps vegetable oil
- ½ Red onion (sliced)
- 1 large tomato (diced)
- 14 ozs canned chickpeas (garbanzo beans)
- ½ Lime (juice)
- ¼ tsp ground Chipotle chile
- freshly ground Black pepper (to taste)
- 11 ozs Cooked chicken (sliced)
- 4 Flour tortillas
- 1 Avocado
- To garnish
- cilantro (torn)
- Lime wedge
Heat the oil in a frying pan and add the corn. Cook for about 3 minutes until slightly caramelised. Set aside to cool.
Toss together the onion, tomato, chickpeas, lime juice, chipotle pepper, salt, black pepper and cooled corn.
Wipe out the pan with kitchen paper and heat the tortillas in the pan for 1 minute on each side. Remove from the pan.
Spoon on the corn mixture and place the chicken on top.
Slice the avocado and drizzle with lime juice and place on the chicken.
Garnish with coriander and lime wedges.
