700 grams sugar
1 Tbsp lemon juice
25 grams Citric acid (from the pharmacy section)
700 grams Cherries
½ Cinnamon stick

Preparation steps

1.

Bring 700 ml (approximately 24 ounces) of water and the sugar to a boil. Cook for 5 minutes, then remove from the heat. Add the lemon juice and citric acid, and stir until combined. Rinse the cherries, remove the stones, and add to the syrup. Crush the mixture gently with a potato masher.

Add the cinnamon stick, and let the mixture infuse for 1-2 hours. Pass the mixture through a fine strainer, bring to a boil, then pour into sterilized bottles. Seal tightly, and cool completely.
