- 250 grams Sweet cherry
- 250 grams honeydew melon (cut with rind removed)
- 4 Tbsps Rosé
- 1 pc Lemon peel
- 1 Tbsp lemon juice
- 2 Tbsps sugar
- 1 Cinnamon stick
- ½ tsp cornstarch
- 125 grams Whipped cream

Preparation steps
1.
Rinse, drain and pit cherries, collect juice. Dice melon.
2.
Boil wine, lemon zest, lemon juice, sugar and cinnamon stick. Add cherries and melon and simmer until fruit is soft, with a slight bite.
3.
Make a slurry with cornstarch and a little cold water. Thicken mixture by adding slurry. Remove and discard cinnamon stick and lemon peel. Chill. Beat cream until stiff. Pour salad into bowls and garnish each with a dollop of cream. Serve cold.
