500 grams jam sugar (2:1 ratio)

Preparation steps

Rinse and stone the cherries, then place in a large pot. Rinse the lemon in hot water, pat dry, and remove a thin piece of zest. Add the zest and cinnamon to the cherries, then mix in the sugar. Let marinate together for at least 1 hour.

Bring to a boil, stirring often. Cook for 4 minutes until the mixture begins to thicken. Remove the cinnamon and lemon zest, then coarsely puree the mixture. Pour into clean jars, seal tightly, and cool completely.
