- 3 Tbsps vegetable oil
- 2 cloves garlic cloves (finely chopped)
- 1 red chili pepper (finely chopped)
- 8 large Tomatoes (skinned, seeds removed and roughly chopped)
- 2 tsps dried oregano
- 1 Tortilla chip
- 4 pickled, green chili peppers (sliced)
- 2 cups grated Cheese

Preparation steps
1.
Heat the grill to its highest setting.

For the salsa: heat the oil in a pan and gently cook the garlic and chilli until soft. Add the tomatoes and oregano, season with salt and pepper and simmer for 10 minutes.
3.
Pile the tortilla chips onto plates, scatter over the salsa, green chillies and cheese and place under the grill until the cheese melts. Serve immediately.
