- ¼ oz active dry yeast
- 1 tsp sugar
- ⅔ cup warm water
- 2 cups Bread flour (plus extra for dusting)
- ¼ tsp salt
- 1 Tbsp sunflower oil
- ½ cup grated, sharp Cheddar cheese
- ¼ cup grated Parmesan
- 3 ½ ozs cooked Bacon (diced)
- 1 Tbsp chopped, mixed Fresh herbs
- 1 small egg (beaten)

Preparation steps
1.
Mix the yeast and sugar with 3 tablespoons warm water and stir until dissolved. Leave to stand for 5 minutes.

Put the flour in a mixing bowl and stir in the salt. Make a well in the centre and add the oil and the yeast liquid. Add the remaining water and mix to a soft dough. Add a little more water if the dough is dry.
3.
Turn onto a floured surface and knead for 10 minutes until smooth.

Pat the dough out into a circle about 20cm|8" diamter. Sprinkle over both cheeses, bacon and herbs, then fold the dough in half and fold in half again. Knead for 2 minutes.

Shape into 8 rolls and place on a baking tray lined with non-stick baking paper.
6.
Cover with oiled cling film and leave to rise for 40-45 minutes, until doubled in size.
7.
Heat the oven to 200°C (180° fan).
8.
Brush the rolls with beaten egg and bake for about 15 minutes until golden brown. Serve warm.
