- For Caramelized Onions
- 2 Tbsps butter
- 2 Tbsps olive oil
- 24 ozs onions (peeled and sliced)
- salt (to taste)
- 1 Tbsp sugar
- For Gourmet Cheeseburger
- 16 ozs lean Ground beef (chuck; round or sirloin)
- 1 Tbsp Worcestershire sauce
- 2 tsps Dijon mustard
- 1 clove garlic cloves (peeled and minced)
- 1 Tbsp paprika
- salt (to taste)
- freshly ground Black pepper (to taste)
- 4 slices Cheddar cheese (may substitute your favorite)
- 4 gourmet Burger buns (split)
- 2 Tbsps melted butter
- 1 handful salad
- 1 small Red onion (peeled and sliced into rings)
- Condiments (your favorite)

- Oil (for grill grate)

For Caramelized Onions:

Meanwhile, melt butter with olive oil in a thick-bottomed pan until the oil is shimmering. Add the sliced onions and stir to coat. Cook, stirring on occasion for 7 to 10 minutes. Do not let the onions burn or dry out. Sprinkle the salt and sugar over the onions and continue cooking for about 25 to 30 minutes, stirring frequently. If onions seem to be drying out add a little water or oil to the pan. Onions should be browned but not burnt. Continue to cook and stir, scraping up all the browned bits stuck to the bottom of the pan, until the onions are a rich brown color.

For Gourmet Cheeseburgers:

Preheat gas or charcoal grill to medium-high heat.

In a large bowl, combine beef, Worcestershire sauce, mustard, garlic, paprika. salt and pepper. Use your hands to mix and knead the mixture. Divide into 4 even portions and shape into patties.

Lightly oil grill grate.

Place the burgers on the hot grill grate. Grill the burgers until cooked through, about 5 to 7 minutes per side for medium. To check for doneness, insert an instant-read thermometer through the side of the burger until you reach the center. The internal temperature should be at least 160º F. Place the cheese on the burgers, 1 or 2 minutes prior to removing burgers from grill.

Brush the buns with melted butter and toast on the grill for 30 to 45 seconds, or until golden brown.

Assemble the burgers: Place greens on the bottom bun, season to taste with salt and pepper. Arrange the cheeseburger on top of the lettuce leaves. Top with caramelized onions and sliced red onion rings. Add your favorite condiment, ketchup, relish, mayonnaise, etc. , and remaining bun top. Serve.
