500 grams green Beans
salt
1 onion
20 grams butter
white freshly ground pepper
6 eggs
60 grams Roquefort cheese
1 Tbsp chopped Walnut
clarified butter (for cooking)
1 bunch Chives

Preparation steps

1.

Rinse beans and cut diagonally into thin slices. Cook in boiling salted water for 4-5 minutes. Drain well.

2.

Peel and dice onion. Heat buter in a pan and saute onion for a few minutes. Add beans and saute briefly, season with salt and pepper.  

3.

Mix eggs with mashed Roquefort and walnuts. Season with salt and pepper. Heat clarified butter in a pan and make 4 omelets from the mixture. 

4.

Rinse chives, pat dry and cut into small rings. Arrange omelets with beans on plates and serve sprinkled with chives.
