250 grams grated Cheese (such as, Bergkäse)
4 onions
1 tsp sweet ground paprika
2 Tbsps Pastry flour
vegetable oil (for frying)

Preparation steps

Place the flour in a bowl and beat the eggs into it. Season with 1 teaspoon of salt and nutmeg and stir vigorously with the dough hook of a hand mixer or a wooden spoon to form a pasty dough. As needed, add a little cold water. The dough should fall from a wooden spoon. Leave to rest for about 10 minutes.

Bring a large pot of salted water, up to about 4 cm below the rim (approximately 1 1/2 inches) to a boil.

Preheat the oven to 160°C (approximately 325ºF).

Press the dough through a ricer in portions and into the boiling water. Stir several times until the noodles float to the surface. Remove with a slotted spoon, drain and place in a baking dish.

Shower with some cheese and add the next layer of noodles. Continue with the remaining ingredients and finish with a layer of cheese.

Bake for 5-10 minutes until the cheese melts.

Peel the onions and cut into rings. Season with paprika, salt and pepper. Dust with flour and fry in portions for 2-3 minutes in some oil until golden brown. Drain on paper towels.

6.

Season the noodles and transfer to plates. Serve with the onion rings on top.
