1 kilogram potatoes
200 grams Feta
½ bunch Chives
4 Endive
2 Tbsps butter
vegetable oil (to fry)
salt

Preparation steps

Peel the potatoes and grate coarsely. Crumble the feta coarsely and mix with the grated potatoes. Rinse the chives and chop finely. Mix the chives into the potato-feta mixture, and season with salt and pepper.

To ccok the hash browns, heat 1 tablespoon oil in a frying pan and place a little pile of potato mixture in it. Flatten the pile and fry until golden brown on both sides. Remove the pancake from pan and drain on kitchen paper. Cook more has browns from the mixture until it is used up.

Rinse, trim and halve the endives. Saute the endives in a pan in hot butter for about 8-10 minutes until golden brown. Season with salt and pepper.

Serve the fried endives with the hash browns.
