- 2 Tbsps Oil
- 1 onion (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 1 green chili pepper (very finely diced)
- 4 cups Chard leaf (leaves finely sliced, stalks finely diced)
- 1 Kohlrabi (finely diced)
- 1 Zucchini (finely diced)
- 1 ⅔ cups floury potatoes (finely diced)
- 3 cups vegetable stock
- 1 cup unsweetened Coconut milk
- ½ tsp dried thyme
- ½ tsp ground allspice
- 2 Chicken breasts (sliced)
- 2 Tbsps snipped Chives

Preparation steps

Heat the oil in a saucepan and fry the onion, garlic and chilli. Add the chard stalks, kohlrabi, courgette and potatoes and fry for around 5 minutes over a moderate heat.

Add the chard leaves, stock and coconut milk. Season to taste with thyme, allspice, salt and ground black pepper, and simmer over a low heat for around 15 minutes.

Use a ladle to remove about 1/3 of the vegetables and put these to one side. Purée the rest of the mixture, then heat through. Add the chicken and cook over a low heat for 5-7 minutes until cooked through.
4.
Return the vegetables to the pan and heat through. Serve the soup garnished with snipped chives.
