- 4 stalks Celery
- 2 large onions
- 100 milliliters white wine
- 2 Tbsps White vinegar
- Salt and freshly ground pepper
- 1 pinch sugar
- 4 Tbsps olive oil
- 150 grams black olives
- mint (for garnish)

Preparation steps
1.
Rinse celery, trim and finely chop. Peel onions and cut into thin rings. Boil white wine in a saucepan. Add celery and onions to the saucepan and cook for 3-5 minutes. Remove celery and onions with a slotted spoon and let cool.
2.
Boil white wine until liquid is reduced by half. Stir in vinegar, sugar and olive oil and season with salt and pepper.
3.
Arrange celery, onions and olives on plates, drizzle with white wine sauce and serve garnished with mint.
