Preparation steps

For the cauliflower: Place the eggs in a pot and cover with water. Boil until hard, about 10 minutes. Rinse with cold water to cool, peel and coarsely chop.

Rinse the cauliflower and dive into florets. Cook in a pot of boiling salted water until al dente, about 10 minutes. Drain.

Heat the butter in a skillet. Add the breadcrumbs and toast until golden brown, about 2 minutes.

In a bowl, stir the chopped eggs with the parsley, and season with salt, pepper and nutmeg to taste.

For serving: Divide the cauliflower between plates. Sprinkle the egg mixture and breadcrumbs on top.
