- 1 large Cauliflower
- ½ lemon
- 1 bunch scallions
- 1 bunch cilantro
- 50 grams Yogurt (0.1% fat)
- juice of lemons
- 3 Tbsps olive oil
- salt
- peppers (freshly ground)
- 2 tsps Curry powder
- 1 tsp Turmeric
- 2 Tbsps Pine nuts

Preparation steps
1.
Divide cauliflower into florets and rinse. Boil salted water with lemon peels and cook florets for about 7 minutes or until al dente, drain, rinse and drain again.
2.
Rinse and dry scallions and cut into rings or strips. Rinse cilantro, shake dry and chop coarsely.
3.
Combine yogurt, lemon juice and olive oil until creamy. Season with salt, pepper, turmeric and curry. Add scallions and cilantro, mix well. Toss cauliflower florets with salad dressing and sprinkle with pine nuts. Serve.
