700 grams Cauliflower
salt
1 shallot
150 milliliters Vegetable broth
½ red Bell pepper
4 dried Tomatoes (in oil)
1 Tbsp lemon juice
1 Tbsp White vinegar
salt
50 grams pitted green Olives
2 Tbsps olive oil
4 little, green Cauliflower (for garnishing)
4 parsley (for garnishing)
freshly ground peppers

Preparation steps

Rinse cauliflower wash, halve large florets. Cook in boiling salted water for about 8 minutes or until al dente. Peel shallot and chop finely. Heat broth in a pot and cook shallot for about 3 minutes. Rinse pepper, halve, remove seeds and ribs, dice finely. Drain sundried tomatoes and cut into fine strips.

Drain cauliflower, add to shallot. Add lemon juice, vinegar and season with salt. Cover and let soak for about half an hour. Cut olives into slices.

After half an hour, add olive oil, peppers, tomatoes and olives. Mix well. Place in serving bowls. Garnish with cauliflower leaves and parsley, season with pepper and serve.
