Preparation steps

1.

Cut leek lengthwise, rinse, clean and cut into rings. Rinse cauliflower florets and blanch for 2-3 minutes in boiling salted water. Drain, rinse in cold water and drain again. Combine leeks and cauliflower and place in a buttered casserole dish.

2.

Combine cream with milk, eggs and half of cheese, season with salt, pepper and nutmeg. Pour mixture over vegetables. Cut off bread crusts and cut bread into small cubes. Heat butter in a pan  and cook bread cubes until golden brown. Remove from pan, drain on paper towels and cool. Mix with remaining cheese and sprinkle over vegetables. Bake gratin in preheated oven at 180°C (approximately 350°F) for about 25-30 minutes or until golden brown. Remove from oven and serve immediately.
