Preparation steps

1.

Toast the hazelnuts in a dry pan until fragrant. Remove from the heat and let cool. 

2.

Peel the apples and the carrots. Quarter the apples and remove the core. Coarsely grate the apples and carrots, then drizzle immediately with the lemon juice. 

3.

Coarsely chop the hazelnuts. Mix the yogurt with the honey until smooth. 

4.

Arrange the salad on plates, drizzle with the yogurt, and sprinkle with the nuts. Garnish with the arugula and the apples, and serve.
