4 Tbsps olive oil

Preparation steps

1.

Rinse and peel the apples and carrots. Quarter the apples, remove the core and grate coarsely. Coarsely grate the carrots as well. Mix the grated apples and carrots with the lemon juice and olive oil. Season with salt, pepper and a pinch of sugar. 

2.

Allow to salad to marinate briefly, then transfer to serving bowls and garnish with fresh mint.
