Carrot and Apple Salad
Rinse and peel the carrots. Julienne half of the carrots, and slice the other half. Rinse, halve, and remove the core of the apples. Julienne half, and thinly slice the other half.
Peel and julienne the kohlrabi. Coarsely chop the hazelnuts. Mix the vinegar, lemon juice, oil, and salt. Divide the vegetables into 4 bowls, and drizzle with the dressing. Garnish with the fresh mint before serving.
