For the pork
4 Tbsps honey

8 Pork cutlets (boneless, each 90 grams)

8 ripe Tomatoes
150 grams Mangoes
3 Tbsps Mango juice
2 Tbsps scallions
2 Tbsps olive oil

Preparation steps

1.

For the pork, heat the honey slightly and stir in the lime juice and tomato paste. Rinse the pork cutlets, pat dry, season with salt and pepper and cook on a preheated grill on each side for about 4 minutes. Brush frequently with the marinade.

For the salsa, blanch the tomatoes in boiling water, rinse in cold water, peel, quarter, core and cut into small cubes. Cut the mango pulp into small cubes. Combine tomatoes, mango juice, chives, 2 tablespoons oil and Tabasco sauce to taste. Season with salt and pepper, mix well and adjust seasonings, if necessary.

Arrange the pork on a platter with tomato-mango salsa and serve immediately.
