- For the roast
- 1 ½ kilograms roast pork (cured)
- 1 red chili pepper
- 4 Tbsps honey
- 4 Tbsps lemon juice
- ½ tsp ground ginger
- 1 generous pinch Ground allspice
- 1 pinch Ground cinnamon
- 1 pinch ground coriander
- 1 pinch cayenne pepper
- 2 Tbsps vegetable oil
- 200 milliliters Beef stock

Preparation steps

Preheat oven to 200°C (approximately 400°F). Rinse ham, pat dry and cut the rind into a diamond pattern with a sharp knife or electric knife. Rinse chile, remove seeds and ribs, and finely chop. To make glaze: Stir together honey, lemon juice, ginger, chopped chile, allspice, cinnamon, coriander, and cayenne pepper.

In a roasting pan, heat oil. Add ham and brown on all sides. Add beef stock and brush ham with some glaze. Roast ham about 90 minutes, brushing frequently with glaze. Remove ham from oven, let rest briefly, slice and serve.
