- For the salad
- 100 grams shrimp (ready to cook)
- 100 grams Crabmeat (in brine)
- 1 Pineapple
- 1 shallot
- 2 Tbsps vegetable oil
- 8 leaves Lettuce
- salt
- cayenne pepper
- For the dressing
- 2 Tbsps Mayonnaise
- 2 Tbsps Ketchup
- splash lemon juice
- 1 Tbsp Cognac
- ½ tsp Horseradish (in a jar)

- Watercress (for garnish)

Preparation steps
1.
For the salad: Rinse shrimp and crabmeat and pat dry.
2.
Peel pineapple with a sharp knife and cut into very thin slices.
3.
Peel shallots and chop finely.
4.
Rinse and clean lettuce leaves and tear into small pieces.
5.
For the dressing: Stir together the mayonnaise with ketchup, horseradish and cognac. Season with salt, cayenne pepper and lemon juice.
6.
Arrange lettuce and pineapple slices on plates.
7.
Rinse and spin dry the watercress.
8.
Saute the shallots until translucent in hot oil, add shrimp and crabmeat and saute briefly. Season with salt and cayenne pepper and pour over the salad. Drizzle the dressing over the salad, garnish with watercress and serve immediately.
