- 8 small, red Apple
- 8 Licorice
- 2 ⅓ cups brown sugar
- ⅞ cup Maple syrup
- ⅔ cup Golden syrup
- ½ cup double cream
- ¼ cup unsalted butter

Preparation steps
1.
Remove the stalks from the apples, cut away the top of the core and carefully insert the liquorice stalks.
2.
Put the sugar, maple syrup, golden syrup and cream into a pan and heat gently until the sugar has dissolved.
3.
Turn up the heat and cook until the mixture reaches 180C, swirling the pan from time to time, then stir in the butter.
4.
Dip the apples into the caramel sauce and serve on cold plates.
