5 Tbsps olive oil
Sea salt
700 grams Tomatoes (such as Strautomaten and Black Prince)
1 scoop Mozzarella
1 white onion
2 Tbsps white balsamic vinegar
salt
freshly ground peppers

Preparation steps

1.

Rinse and dry the basil, then finely chop half of it. Crush in a mortar with half of the olive oil and a pinch of sea salt. Rinse the tomatoes, and cut into slices.

Drain the mozzarella, and cut into slices or tear into pieces. Peel the onion and thinly slice into rings. Arrange the tomatoes, mozzarella, and onions on a plate.

3.

Top with the basil oil, and drizzle with the remaining oil and the vinegar. Season to taste with salt and pepper, and garnish with the remaining basil leaves. Serve with fresh ciabatta, if you'd like.
